"Culture can only be thought of as a dialogue, since it is a collective expression. Each time we witness a cultural expression, it tells about a relationship, which crystallized at a certain moment. This cultural expression will forever leave the imprint of a binding form, of a specific society at a precise moment."

"FOOD ON THE GO"
The Italian diaspora defined a strong food influence over the American continent. This documentary collects the relationship between the Italian origins and the American Taste.

Gastronomic culture is the result of the movement of man looking for new forms of food. The journey of Italian food, along with large migration processes to America, prove it. Almost one hundred years after, following the tracks of il cibo and its journey to New York and Buenos Aires, we witness the foundation of a new tradition of Italian food in exile. What bond does it preserve with the original country? Can we talk about Italian food outside of Italy?

— What are you expecting from the upcoming Media-Forum Dialogue of Cultures?
— I am truly amazed on how far a film such us "E il cibo va" could travel and have an impact on people from different cultures. My main expectation in the forum is to discuss with other participants how people in Europe and Russia perceive food and culture as a way to relate to history and among each other. And specially to learn more of the history of food and culture in San Petersburgo and Russia.
— Have you ever been to Russia?
I traveled to Russia one February with my mother, 16 years ago, shortly after the death of my father. It was a trip they had planned together. At night she drank vodka and ate caviar in one of the restaurants of the Hotel Ucrania. In my memories Russia oscillated between cold, melancholy, vastness and beauty. We toured Moscow: I have a picture with some hats on Red Square. We took a train that would take us to St. Petersburg at night. We had dinner in the dining car. I had to choose something at random from a letter in Russian. My dinner was a chocolate bar. On a tour they gave us lunch at the house of a lady who prepared a Beef Strogonoff. The taste of that dish is the most vivid memory I have of the trip.

— Tell a few words about your future project connected with women in bakery.
Mother Dough is my second film and it is a feature documentary that traces back the history of bread from a gender perspective. Beginning with the invention of agriculture, going through the first yeast dough up to the industrialization of production, the documentary narrates the relationship between the history of bread, main food in all western tables, and the responsible for the administration of domestic life and the preparation of the meal: women.
— You've been shooting your documentary «Food on the Go» in different countries. Please, share your opinion, what is important for a journalist, film director, who works on a cross-border project involving the international team?
In order to make a documentary project in several countries it is important to build a solid team that communicates between each other. In our case for this film it was essential to have team members in Argentina, the USA and Italy. It is crucial prior to the time of shooting to have a strong investigation and coordination, especially if you are is going to travel and film abroad, since the margins of making retakes are reduced to a minimum. To strengthen links between team members in different countries, it is important to maintain fluent communication via the Internet and assiduously review the script, filming plan and budget to minimize misunderstandings.
